The First International Meeting of Knowledge and Blue Growth, InnovAzul 2018, also has a special place for innovation in haute cuisine linked to the sea

The First international Meeting of Knowledge and Blue Growth, InnovAzul 2018, already has over 1,100 accredited attendees, with a 1,900 m2 exhibition area with stands of 44 entities and another area with 98 tables for B2B meetings on innovation technologies for that will cater for up to 3,000 working meetings. In addition, over 100 top-level speakers will participate in the six themed areas related to the sea. This event, which will be held between 29th and 30th November 2018 at the Congress Palace in Cadiz, also has a privileged place in the program for gastronomic innovation linked to the sea which is giving such excellent results.

For this, it counts on the participation of the prestigious “Chef of the Sea”, Ángel León from Cadiz, who will give a presentation on November 29 at 14:00 hours entitled “The Sea and Gastronomy”. This chef has already been granted four Michelin stars thanks to his courageous and personal commitment to the use of marine products in a creative and sustainable way, in his restaurants Aponiente and Alevante. The Chef of the Sea will share his experience in innovation in the use of new products such as marine plankton or fishery discards in his professional activity and how he has achieved the highest culinary awards.

In the same section, InnovAzul also counts on the participation of another prestigious chef, the Portuguese Lionel Pereira, owner of the restaurant San Gabriel (in Quinta do Lago, Almancil), who has stood out in his successful professional career for the treatment of products from the sea, especially fish and shellfish, and who has, among his other achievements, been granted a Michelin star. Pereira will give his presentation on November 30th from 13:00h.

Subsequently, at 13:30h, two researchers from the University of Cadiz, Francisco Javier Fernández Acero and Ana Roldán Gómez, will give their presentation entitled “Cases of Success in University-Business Marine Gastronomy” which will be followed by a “DemoLab” focused on the treatment of cooking products of marine origin.

In addition, the organizers of InnovAzul have set up this first meeting with an important weight in the business fair and networking field (in which hundreds of private firms will participate with the possibility of arranging up to 30 B2B meetings per company using the online agenda), in addition to the stand area.

The themes chosen revolve around the production sectors related to the marine maritime world (shipbuilding and offshore; marine renewable energies; fishing, aquaculture and transforming industry; ports and port logistics; tourism linked to the sea; marine bioproducts) and includes an Open Innovation area, in order to promote and support technology-based startups in the marine sector.

INNOVAZUL 2018 is promoted by the State and Regional administrations, with the main sponsorship of the Ministry of Knowledge, Research and University of the Andalusian Regional Government, and also with the Banco de Santander, the Provincial Government of Cadiz, the Cadiz Town Council, Endesa, Iberdrola, Navantia and Telefónica.
